Cake Recipe Using Natural Fruits
This tasty cake is ultra easy to make and can be the star of any celebratory occasion - from holidays to birthdays to anniversaries. And yes, you can enjoy a slice even if you're dieting.
This recipe makes use of natural raw fruits. When shopping, look for sweet, fully ripened fruits and berries.
Berries have a very limited shelf life. While the top of the peek-a-boo package displays plump, red-ripened berries, take a moment to turn the container over and view the bottom.
When the berries are past their prime you'll know immediately. They turn to goo and the color of the berry is a brownish hue.
If you prefer to use frozen fruit in your cake, you can certainly do that. Just allow it to reach room temperature before adding to the cake.

1 vanilla cake mix, prepared - or you can use low fat pound cake, angel food or sponge cake if you wish
How to Prepare This Recipe
Begin by using your favorite recipe or box cake mix and prepare it according to directions. Bake the cake is a flat, rectangle pan, then cool completely.
Next, place the baked cake into the freezer for about 1 hour. As a note, a ready-made cake may also be used. Most markets carry angel food cakes, as well as pound cakes that have been prepared in loaf pans.
Simply cut the cake in the middle and place side-by-side to form the rectangle, then place into the freezer on waxed paper.
Next, mix 1 small can of drained crushed pineapple with 1 eight-ounce container of LIGHT or Fat-Free whipped topping which will form the frosting. Remove the cake from the freezer and frost.
Layer thinly-sliced fresh strawberries into rows, forming the 'stripes' of the cake. Next, add fresh blueberries in the upper left corner to form the 'stars'.
Check the calorie content on your packages/add/then divide by the number of servings to determine calories.
This is great practice and is something that you should do for everything that you bake!
