July 4th, a Must for Potato Salad & Ours is Lower in Fat & Calories

What's the Fourth of July without potato salad? It's as American as hot dogs, apple pie and baseball.

However, it's generally a no-no while dieting - until now. Our recipe for potato salad is low in fat, low in calories and won't blow your diet out of the ballpark along with the hot dogs and apple pie.

Replacing Fatty Ingredients With Healthier Foods

A traditional mixture of potatoes (of course!), boiled eggs, pimentos, mustard and salad dressing or light Mayo, Diet Bites Firecracker Potato Salad won't leave a dieter wishing they had enjoyed the full-blown version.  

Ingredients for Firecracker Diet Potato Salad

1 five-pound bag of potatoes, any variety but we highly recommend red potatoes that have the extra-white flesh
3 boiled eggs, peeled, washed and diced
1 jar of pimentos, fully drained
1/4 cup of mustard: yellow, honey mustard or brown spicy
1-2 cups of Miracle Whip Light OR Reduced Fat Mayo
1 small can of black or green olives, fully drained
ground paprika, optional
1/4 cup of sweet or dill pickle relish
sea salt & cracked pepper to suit personal taste

How to Prepare This Lower Calorie Recipe

Place potatoes into your microwave and cook until they can be pierced easily with a fork. Remove using care and a heavy set of protective cooking mittens - and allow to cool until they can be easily handled with bare hands. Remove the peelings.

You can also use the standard method by first peeling the raw potatoes, cutting them into chunks, and then placing into a pot of water.

Bring the liquid to a roaring boil and continue to cook until the potatoes are tender.

Of course, this is also the method for preparing mashed potatoes - so the next time that you do such, you can prepare a double-batch, setting aside one-half of the potato chunks to use in this potato salad recipe.

You canalso boil the unpeeled potatoes until done, then allow them to cool before removing the jackets. All of these methods will work just fine in our recipe.

If you're using the microwave option, cut the peeled potatoes into chunks. If you like a smooth texture, you can even hand-mix them with a standard mixer. If you like the chunks small or large, it's up to you to determine such.

It's time to add the drained pimentos along with one small can of drained sliced black olives. If you prefer green olives - then go for it. Add one to two cups of either light reduced fat Mayo or Miracle Whip Light.

Also add the following ingredients: 1/4 cup of mustard, sea salt and cracked pepper to suit personal taste.

About the mustard; you can use honey mustard for a few more calories, or brown spicy mustard. All work great inthis recipe.

Finally, add 1/4 cup of sweet or dill pickle relish. If you like a sweet potato salad, then use the sweet variety; if not - go for the traditional dill.

Finally, add the diced boiled eggs. You can arrange sliced boiled eggs on the top of the potato salad for a beautiful display and sprinkle with ground paprika.

Diet Tips for Potato Salad

Potato salad is a food item that can easily be personalized.  

You may not like mustard in your salad OR Mayo - so adjust it accordingly.

Likewise, you may prefer more Mayo or mustard or relish or so forth, so again, adjust to suit your personal taste as well as the guests that may be attending the meal.

We do not recommend the fat-free Mayo because of the inferior taste. If you like it, that's great because you'll save even more calories and dietary fat grams.

Firecracker Tator Salad will keep for about three days in your refrigerator in an air-tight, sealed container.

Calories:  Enjoy 1 cup of potato salad for about 200 calories. This recipe will feed a huge crowd.
