Diet Recipe for Low Fat, Low Calorie Almond Joy Biscotti

If you're a big fan of Biscotti, you'll love our Almond Joy Biscotti.  Our Recipe for Almond Joy Biscotti which makes about 24 servings for 50 calories per serving.

Ingredients for this Diet Biscotti Recipe

2 cups of flour
1/4 cup of REAL sugar
1/4 cup of Splenda
2 Tablespoons of Butter OR Margarine
4 slightly beaten whites from X-Large eggs
1 Tablespoon of baking powder
1/8 teaspoon of salt
1 Tablespoon of Almond Extract
1/4 cup of sliced almonds

Cream butter and REAL sugar.  Add Splenda and stir.  Add egg whites and extract and mix well. In another bowl, mix all of the dry ingredients, except almonds.  Pour wet into dry and add almonds. Shape into oval loaf and place onto a cookie sheet that has been sprayed with non stick cooking spray.

Cook at 375 degrees for about 15 minutes, until done in center of loaf. Remove and slice about 1/2" apart, making 24 slices total. Return slices to oven in a shallow pan that has been sprayed with non stick cooking spray. Cook 5 minutes more on each side. Remove. Cool completely. Store in airtight container.

May be enjoyed warm or cold. As Biscotti ages, it hardens further still.

In addition, you may choose to toast your almonds.  To do such, simply place them in a shallow baking pan and pop into the oven for about 5 minutes. Take care not to over-toast.
