Chipolte Sauce is suddenly 'all the rage'. So what are Chipoltes?

Chipoltes are smoked, dried jalapeno peppers that hold a very unique taste - an exotic taste. And exotic is 'always in style'.

It's not only exotic - it's low in calories and it's fun to make. You may even choose to roast the peppers yourself.  

How to Roast Chipolte Peppers

Do such by placing them onto a hot grill, then turning them as the skins change colors. Cool the peppers, then remove the jackets very carefully.

You may also roast the pepper indoors should you prefer, but of course - using your oven and not your grill.

However, there are heavy iron pans which have grill marks which can be used on your stove top. They generally work on gas and electric stoves.

You will want to use protective gloves when working with the hot peppers and it's not a bad idea to put on some protective goggles.

I can't count the occasions when I've accidentally touched my face or eyes when working with hot peppers and it's very painful.

Recipe Ingredients for Chipolte Sauce

These are the ingredients necessary to prepare this recipe.

1/2 cup of Chipolte Peppers, roasted and chopped finely (depending upon where you live, you may find these canned)
1 cup of roasted red peppers, chopped finely
1/2 cup of very finely chopped white SWEET onion
1 large clove of garlic, minced
1 Teaspoon of Chili Powder (optional)
1/2 Teaspoon of Cumin (optional)
1 can of diced Spanish-style tomatoes
1/2 cup of diced cilantro
1 Tablespoon of Extra Virgin Olive Oil

How to Prepare Recipe

Heat the olive oil until hot and carefully add your chopped peppers, garlic and onion. Cook until the onions are translucent, stirring constantly. Add diced tomatoes, chili powder, cumin and cilantro, and simmer uncovered for about 15 minutes, stirring if needed.
