Taco Salad & Jumping Bean Salad

This salad is a dieter's delight!  

Nutritious, low in calories, low in sodium - with virtually no fat yet packed with Vitamin C, fiber and other important nutrients that you need now, more than ever.

It's also a recipe that you marinate the night before and it's always nice in the hot old summertime to be able to prepare meals in advance.

Taco Salad, a low calorie recipe for dieters

You will need the following ingredients:

1 pound of extra lean ground beef
1 taco shell that is preformed (150 calories)
Chopped salad mix: lettuce, cilantro, tomatoes, onions
Shredded low fat cheese
1 package of your favorite taco seasoning mix

You can also add light sour cream, your favorite brand of salsa or picante sauce, sliced black olives and a limited amount of avocado slices to the recipe.

To prepare, brown the ground beef until the juices run clear; add the taco seasoning mix and a shot or two of water if necessary. You can also add a bit of chopped onion and garlic if you wish to the beef as it cooks for additional flavor.

While the beef is cooking warm the taco shell. You can find these pre-molded in the Mexican cuisine section at larger markets.

You can also prepare your own using tongs, vegetable oil and a flour tortilla but the commercially prepared shells have the calories and fat grams pre-calculated which is very convenient - and you'll know exactly how many calories you are sticking into the menu.

Transfer about 1/3 cup of the beef mixture to the warmed shell. Add a lot of the salad as it is very low in caloric and dietary fat content.

Sprinkle on a bit of shredded cheese. Serve with additional salsa if desired.

Diet Recipe for Low Calorie Diet Jumping Bean Salad

Serves 6 extremely generously for about 52 calories per serving. You'll need the following ingredients to prepare this diet recipe:

2 cups of cauliflower - trim into bite-sized florets (25 calories per cup)
1 eight ounce can of Three Bean Salad - do not drain (250 calories)
1/4 cup of chopped pickled mild banana peppers, if desired (about 10 calories) 

Marinate overnight if desired to allow flavors to penetrate the ingredients. Serve with thinly sliced lean meat placed on tiny bread with sliced cheeses, a few tortilla chips, a fruit salad and a keg of diet lemonade.

Tip: A simple and economical recipe for diet lemonade is water, a freshly squeezed lemon or lemon juice plus the sugar substitute of your choice. Work with these ingredients to make the brew that's just right for you.
