Jumping Bean Salad - Diet Salad Recipes

Mmmm - somethin' good's a-cookin in mama's kitchen....

This salad is a dieter's delight!  Nutritious, low in calories, low in sodium - with virtually no fat yet packed with Vitamin C, fiber and other important nutrients that you need now, more than ever!

It's also something that you marinate the night before and it's always nice in the hot old summertime to be able to prepare in advance!

Diet Recipe for Low Calorie Diet Jumping Bean Salad

Serves 6 extremely generously for about 52 calories per serving.  You'll Need:

2 cups of cauliflower - trim into bite-sized florets (25 calories per cup)
1 eight- ounce can of Three Bean Salad (do not drain) (250 calories)
1/4 cup of chopped pickled mild banana peppers, if desired (about 10 calories) 

Marinate overnight if desired.  Serve with thinly sliced lean meat placed on tiny bread with sliced cheeses, a few tortilla chips, a fruit salad and a keg of diet lemonade.

Tip: A simple and economical recipe for diet lemonade is water/a lemon/Splenda or Equal. Work with these ingredients to make the brew that's just right for you!
