Looking for a delicious morning breakfast muffin or anytime recipe that is easy to prepare, made with wholesome ingredients and that can fit into your weight loss plan? If so, then you may fall in love with our tasty Stuffin' Muffin recipe.

Our recipe is prepared with low fat or skim milk, egg substitute, peanut butter, raisins and baking mix.

Ingredients Which Can Be Substituted

If you don't like egg substitute you can certainly use a whole egg. If you don't like raisins you can omit them from the recipe.

The peanut butter acts as a combining agent as well as the 'oil' for moistness in the recipe.

Smashed banana or your favorite fruit may be substituted for the peanut butter.

Also, you can use either smooth, crunchy or extra crunchy in this recipe.

If you are concerned about sugar substitute usage, simply opt for granulated table sugar, light brown sugar or dark brown sugar instead.

If you prefer whole milk or 2% milk over low fat or skim, then please feel free to use such. And even buttermilk or Half & Half will work well in this recipe if you're not concerned about the increased caloric content.

In addition you can prepare the muffins in your oven or toaster oven rather than the microwave - and you can certainly prepare them ahead such as in the evening so that they can be enjoyed at breakfast time.

As we can see, there is nothing set in stone where this muffin recipe is concerned - so use your imagination and personalize it if you wish.

Diet Recipe for Microwavable Stuffin' Breakfast Muffins

1/4 Cup of Skim Milk
2 Tablespoons of Sugar
2 - 4 Packets of Equal or Splenda (Splenda holds up to the heat better.)
2 Tablespoons of No Calorie Refrigerated Butter Spray
1 Cup of Baking Mix (Opt for the lighter version)
1/4 Carton of Egg Substitute (or 1 egg)
2 Tablespoons of Peanut Butter
1 Tablespoon of Raisins (optional

How to Prepare This Recipe

Picture of Breakfast Muffin RecipeLine a microwaveable muffin dish with paper baking cups (or use a glass ring).  Beat all ingredients except baking mix until blended; stir in baking mix gently until just blended.

Fill cups evenly.

Microwave on high 1 1/2 minutes - 4 minutes until tops appear dry. Remove and cool.

This recipe makes 6 breakfast muffins for about 135 calories each. That is quite a nice purchase where calories are concerned as commercial muffins often contain 400 calories or more per muffin.
