Simple Recipe for Chicken Soup

Take one medium sized container of chicken broth and add 1 cup of prepared chopped chicken. Also add 1 cup of cooked baby carrots and 1 cup of instant rice.

Bring to a boil and continue to cook until the rice is tender.

You can add more flavors to this recipe by cooking the carrots in the broth or adding other vegetables that have been sauteed in a teaspoon of extra virgin olive oil. My favorites include: onion, mushrooms, celery and bell pepper.

Simple Recipe for Vegetable Beef Soup

If you have leftover roast, this is an excellent way to make use of it. Use 2 containers of beef broth, 2 cups of chopped carrot, 2 cups of cubed potatoes and any seasonings that you like - such as onions, leeks, bell peppers, celery, shallots or garlic. Place everything into a deep soup pot and cook until the potatoes and carrots are tender.

Using sodium reduced broth is a wise choice.

Dieting Amid the Holidays, The Countdown Begins

Today I gazed at the calendar in the laundry room after I turned on the washing machine. One of our sons and his darling  wife gave us this adorable ferret calendar last Christmas - and whenever I check for dates, it brings a smile to my face.

Only ten days until Halloween which to me, signals the beginning of the holidays. This year it appears that the stores in our area have tamed down the generally-hasty arrival of the gift giving season.

I've always thought it odd to enter a store and hear Christmas music baying in the distance in the middle a hot Texas August.

The pumpkin pie from yesterday is now two slices empty and turned out to be the best pumpkin pie that I've ever made. I'm thinking that the thickness of the pie contributed to such, as well as the spices.

  Today the weatherman has predicted (ha ha) that our temperatures will be even warmer than yesterday - in the low 90's and unseasonably warm even for Texas.

The trees appear to be in limbo - not knowing whether to color their leaves or remain green.

Butterflies are abundant in our area - also quite rare for late October. And to date, we have not seen the geese migrating in preparation for winter.

The first true 'cold' snap of the season is due to arrive tomorrow and temperatures are suppose to dip down into the low 60's.

Sounds like a perfect day for making a pot of low fat, low calorie and very tasty chicken soup!
