Diet Bites Best Daily Diet Tips for Weight Loss -November 28 " It's a Family Tradition..." When it comes to the Thanksgiving menu, even blindfolded I could list the foods on the table at Grandma's house. It's the family's meeting place, although Grandma has gotten a bit old and feeble on us - so the majority of the cooking falls down the tier. And I've always loved to cook and create new recipes, but when going to Grandma's house for Thanksgiving - my recipes have to be spot-on or I'll be seized with a look of grave disappointment. As a child, the foods on the family table were mined with cooking oils, rich margarine, and generous doses of salt to lend flavor to the cheaper cuts of meat as we were a family of meager means. In turn, this presents a great challenge: Transforming the otherwise fatty recipe into a healthier recipe. It's the old 'mice into pumpkin coach' syndrome. This is not to say that Grandma's cooking wasn't out of this world - because indeed it was! But in part, her cooking methods were due to a tight budget and the challenge of infusing as much flavor as possible from some of the less desirable foods at the local market. Grandma's challenge was even more challenging than mine could ever be. And once one is accustomed to the rich flavors of fat and sugar - it's very difficult to break free from the mold. So many reduced-calorie recipes just can't hold up against Grandma's delicious fare. With that said - thus far, I'm relieved to say that I've achieved excellent results - and not only at Thanksgiving. A few months ago, I invited the family over to our house to see the nice flock of hummingbirds that had adopted our feeders. Meal time included a roasted pork tenderloin and a healthy coleslaw. My little brother went on and on about that slaw and even mentioned how much he enjoyed it when I saw him on Thanksgiving day. Many times, it only takes a bit of shifting here and there. And yes, sometimes it can be rocket science - but then again, who hasn't dreamed of being an astronaut or a scientist at one time or another? One with a huge brain? And this is coming from a lady who has never flown in an airplane before and one with a very tiny brain. But wait - I must do a bit of amending here because when I was a wee baby of 6 months old, my parents were returning from California to Texas due to my daddy's ended stint in the US Navy - so yes, I suppose that I have been on a plane. If only I could remember. Then again, perhaps it's best that I don't..... Nonetheless, here is a quick recipe for Christmas Slaw - and it may even be a recipe that is similar to one that you use. The use of light Mayo, dried fruit, cabbage from the cruciferous family, and just a smidgen of sugar substitute help create a healthier slaw that is easy on the gut and that adds a boost of nutritional values to the body. The use of cranberries is where the recipe got its name.
Mix all the above together and serve asap. If it's going to be a bit before meal time, simply prepare an hour or so before meal time and leave Mayo on top of the slaw. Mix the Mayo into the slaw just before it hits the table. Christmas Slaw is ultra low in calories and also makes a lovely dip for baked chips OR a topping for crackers and mini-toast. And it's perfect for holiday parties! |
