Well, so much for autumn rearing its lovely head in our area. A taste of winter is scheduled to arrive here come the morrow and it appears that we'll be donning jackets and mufflers for Turkey Day.

Planning Your Holiday Desserts

Speaking of which - if you haven't yet planned out your desserts for Thanksgiving Day, I'll be offering some suggestions over the next couple of days in the Diet Bites Weight Maintenance Journal.

Steering through the holiday meal can be tricky driving for anyone trying to drop pounds, as well as for those who are striving to maintain their current weight.

And as a reminder - just in case you missed an earlier journal, I've given you a challenge whether you have pounds to lose or not: " When the New Year arrives, aim on weighing the same OR less than you do right now - no matter what you currently weigh."

Also, with the Thanksgiving holiday only two days away it might be a great idea to closely monitor what you consume until that time. In the event that you go a teensy bit overboard - doing such just might prove to be your safety net. Now for one of the tasty reduced calorie recipes that I mentioned above...

Butterscotch De-Light Recipe Ingredients, Preparation Notes

This is a reduced calorie, reduced fat holiday recipe.

The Recipe Ingredients & Cooking Instructions

1 cup of all purpose flour

1/2 cup of crushed pecans

1 stick of light or reduced calorie margarine 

Melt margarine and add to flour and pecans. Be sure that the margarine isn't hot, just warm. Bake in a 350° preheated oven for about 10 to 15 minutes, or until crust is golden. Next, blend the following ingredients and spoon onto the baked crust: 

8 ounces of light/reduced fat cream cheese (not fat free)

1/2 of a large container of light/reduced fat whipped topping

Next, blend the following ingredients and spread onto the cream cheese mixture above.

Top with remaining topping and 1/2 cup of chopped pecans.

As a note, both pecans and walnuts work exceptionally well in this reduced calorie recipe. 

3 cups of skim milk

2 small boxes of sugar free/fat free instant butterscotch pudding
