Diet Bites Journal - November 9

" Up on the housetop....."

Wow - it was an ultra busy day for our family. Tom and I took off early this morning to meet our two son's for a day of roof repairing. At least the weather was nice....

While he collected his tools, I worked like a storm in our humble kitchen - quickly tossing together a lunch that we would enjoy later that day.

It took only a few minutes to toss together a Mexican Stew - which is becoming one of my favorite experiments in the kitchen these days. Depending upon what I put inside - it always comes out delicious AND it tastes different. This is the recipe that I used today for a vegetarian style Mexican Stew. You'll need a good five minutes to put this together and OH - it is ultra low in calories and fat. Simply add up the calories using the labels, then divide by number of servings.

Ingredients for Vegetarian Mexican Stew

1/4 cup of frozen onions & celery
1/2 teaspoon of dried cilantro (fresh works well too)
1 teaspoon of olive oil
1 package of ANY variety of Taco seasoning mix
1 can of petite diced tomatoes
1 can of hominy
2 cans of chili beans
Good shot of lime juice (optional)

Sauté onions and celery in olive oil. Add remaining ingredients and heat to a boil

Serve with a wedge of cornbread OR a bit of corn chips and skim based cheese, such as sliced or shredded mozzarella.
