Today I decided that it had been too long since I had prepared my tried-and-true recipe for Beef Stew.

The low calorie recipe tastes wonderful and I hope that you'll give it a try. It's SO delicious and absolutely perfect for those crisp, cold autumn and winter days.

Beef Stew Recipe for Dieters

The Recipe Ingredients:

2 large containers of de-fatted beef broth
2 cups of baby carrots
2 cups of cubed red potatoes, peeled and washed
1 Tablespoon of vegetable oil
6 ounces of tenderized beef steak, cubed
1 cup in total of the following chopped vegetables: onion, celery, parsley
sea salt & cracked black pepper to suit personal taste

Directions for Preparation of Diet Beef Stew

Begin by placing the vegetable oil into a deep non-stick pot. When it is hot but not sizzling, place the cubed steak into the pot. Stir to evenly coat the beef with the oil as well as to cook evenly. When it has cooked about halfway, add the tri-mix of vegetables as well as the salt and pepper. Stir to incorporate.

When the onion clarifies, add the containers of beef broth. This is an excellent time to peel, wash and cut-up the fresh vegetables.

When the broth is bubbly, add the carrots. Allow to cook for about ten minutes, then add the potatoes. The carrots require a bit longer cooking time - so that's why we added them first.

When the vegetables are fork tender, thicken the broth using either cornstarch and water or flour and water.

If you enjoy English peas in your stew, then by all means add them amid the cooking phase. The frozen variety works exceptionally well for stew recipes.

Take time to enjoy your meal rather than rushing through it; thoroughly savor each and every bite. Chew the food well which will aid in the digestive process.

Activity Following Your Meal
