Chicken Fajitas, a Low Calorie Recipe

A Diet Bites original low calorie Fajita recipe.

In the mood for Mexican food  but on a diet? Then our Chicken Fajitas should fit perfectly into your daily diet menu.

Before we get into our low calorie recipe, let's make a short-list of the foods which make Fajitas a dieter's nightmare: cheese - specifically grated cheese, avocado, sour cream, traditional refried beans containing lard and meats in which the fat has not been trimmed away.

The good nutritional points about Fajitas which equal a dieter's dream include: flour shells which are steamed rather than fried in oil, healthy vegetables such as onions, different varieties of peppers and sun-dried tomatoes, lean meat and the ability to personalize.

Working with the above nutritional notes, we created this recipe for Chicken Fajitas - focusing on the healthy ingredients and preparation techniques. As a note, we used prepared chicken Fajita meat which should be located in your cold meats/deli section at your local market.   The local variety we used was virtually fat-free and contained about 300 calories for the entire package, and served three generously. We used about 200 calories worth for this recipe. Of course, feel free to use chicken which has been seasoned with 1 Tablespoon of chili powder, 1 teaspoon of ground cumin, 1 teaspoon of dried cilantro, a bit of chopped garlic and onion and salt and pepper.

Another perk? This low calorie Chicken Fajita recipe goes together in about 5 minutes. And it's perfect for warmer weather as the filling is a cool crispy salad.

Ingredients for Quick Chicken Fajitas
1 Small Bag of Prepared Chicken Fajita Meat, heated on stove top using cooking spray (200 calories)
1/2 head of chopped lettuce + 1 small chopped tomato, any variety
light sour cream (40 calories per 2 Tablespoons)
4 flour tortilla shells, heated in the microwave between two damp paper towels (100 calories each)

Simply fill the flour shell with the meat and a bunch of the salad mix. Top with a dollop of light sour cream. Fold and enjoy. And of course, feel free to add traditional favorites such as a mix of sauteed peppers and onions for minimal calories. If you choose to add shredded cheese, 1/4 cup of shredded cheddar cheese contains about 120 calories (455 calories per shredded cup). One small Florida avocado contains about 365 calories while one small California avocado contains about 227 calories. Excess fat on the meat, including the skin has the potential to double meat calories. An example:

- 1/2 chicken breast, raw with bone and skin removed contains 130 calories
- 1/2 chicken breast, raw with bone removed contains 249 calories

Each Chicken Fajita contains about 150 calories each. What a diet deal!

As a note, be certain to keep flour tortilla calories in check as they can vary greatly - from 80 calories to over 200 calories each. And frankly, that larger shell that contains twice the calories might not be much bigger than the 80 calorie shell.

You can save a few more calories by using corn tortillas, but we recommend the flour shells which offers a traditional Fajita experience.
