Oh my - I spray out of bed this morning feeling extra perky as today is Tom's birthday. I wanted to start his day with something special for breakfast - something very healthy and low in calories, for I had purchased a tiny cake that we would be gnawing on later today - perhaps with a bit of ice cream or fluffy stuff.

Lunch would also need to be low in calories, as would dinner in order to fit in the Birthday Boy's celebration goodies. Here is how our diet worked out on this extra happy day - and the calories and amounts are based on my daily diet and the calories that I consumed:

Diet Breakfast Menu: (Total Calories = 225)

2 scrambled eggs (whipped eggs only cooked in butter flavored cooking spray)
dried cranberries - which I snacked on after eating the eggs
1 cup of decaf coffee with creamer & Splenda

Diet Lunch Menu: (Total Calories = 400)

butterfly shrimp baked in the toaster oven until extra crisp (enjoyed with a squirt of catsup)
roasted carrots (boil baby carrots until tender - about 10 minutes, then transfer to a pan containing a bit of extra virgin olive oil and cook until carrots are golden brown, turning frequently)
3 almonds
1 slice of whole grain bread
Tea (unsweetened)

Diet Dinner Menu: (Total Calories = 400)

Oatmeal (with skim milk, zero calorie butter spray & Splenda)
1 slice of whole grain bread
1 apple
Water
Birthday Celebration: (Total Calories = 250)
1 small slice of cake (150 calories)
1/4 cup of ice cream (70 calories)
little bit of whipped topping (30 calories)
1 cup of decaf coffee with creamer & Splenda
