Delicious Low Fat Recipe for Biscotti

If you love biscotti, then I have an ultra quick-as-a-wink low calorie recipe that I hope you're going to love.

You will need: 1 box of your favorite cake mix (extra moist variety), 1/3 cup of melted butter or margarine, 1 cup of all-purpose flour, 1 teaspoon of vanilla extract  and 2 slightly beaten eggs.

To prepare biscotti, preheat your oven to 350 degrees. Next, empty the commercial cake mix into a large bowl and add the flour. Next, add the melted margarine and the two eggs that have been beaten with the vanilla. Dough will be very stiff - so feel free to pull off your rings and work with your hands.

At this point you can form your loaf OR you can add a few nutritional goodies or you can completely create your personal biscotti formula. For example: I like to add about 1/4 cup of chopped walnuts or pecans to dark chocolate or devil's food biscotti. For vanilla versions, a bit of anise and slivered almonds work deliciously well. So feel free to experiment to the moon and back again by adding your favorite dried fruits, chopped nuts, spices and extracts.

Next, form a long loaf that is about 2 inches in height.  Either place on a cookie sheet that has been sprayed with cooking spray OR that has been lined with parchment paper. Bake until center of cake is done (use the old toothpick trick) and removed - and cool completely.

Using a serrated knife, slice loaf in half, then cut into small strips to form your biscotti. Arrange carefully on a cookie sheet sprayed with cooking spray and return to the oven for about 10 to 12 minutes. Remove and allow to completely cool before eating.

Biscotti may also be dipped in a bit of melted dark chocolate - but of course that will up the calories and fat content.

Entire low calorie basic recipe (using a cake mix that contains 180 calories per slice for 12 slices) contains about 3,180 calories. Recipe makes about 30 biscotti bars so that equals about 106 calories per biscotti.
