The Wonders of Rice + Low Calorie Rice Recipes

Give me a bowl of rice and I'll give you a creation! It's alive, it's alive, it's alive with flavor! Or....it can be.

One thing for sure, there are a lot of options when it comes to boosting the potential flavors of rice. Rice is a bit like mushrooms in being superior in absorbing flavors from other foods.

Rice can be sweet and sour, rice can be hot and spicy. Rice can be buttery, rice can be peppery. Rice can stand on its own or rice can contain every member of the Food Group and taste wonderfully delicious!

First let's begin by listing the calorie content of popular Rice Stars - then we'll add a few tasty low calorie suggestions for 'ricing it up'.

Calories in Brown Rice, White Rice & Wild Rice

1 cup of prepared brown rice contains 216 calories
1 cup of prepared white rice contains 242 calories
1 cup of prepared wild rice contains 166 calories

As to those little boxes of rice mixtures found at your local market - some are quite high in flavor as well as high in sodium content, so be sure to check those labels before purchase.

Low Calorie, Low Fat Recipes Containing Rice

Quick Low Calorie Recipe for Cheesy Vegetable Rice: Mix 1 cup of prepared chopped vegetables of your choice with 1 cup of prepared white rice. Both should still be piping hot so use care. Mix in 1 teaspoon of margarine or butter. Mix well and top with 1 slice of your favorite cheese which contains no more than 70 calories per slice. Total calories - about 350 calories. Add a bit of cooked lean meat before topping with cheese if you prefer a bit more protein in your meal.

Quick Low Calorie Recipe for Vegetable Rice Cakes: In a small bowl, mix 1 cup of your favorite prepared rice with 1/2 cup of assorted cooked vegetables. Diced carrots, diced onions, mushrooms, whole kernel corn, bell pepper and chopped broccoli all work well. Next, add 1 Tablespoon of all-purpose flour, 1 egg and a bit of salt and pepper. Combine, then cook on the stove top using cooking spray. I mold the rice cakes in my hand before laying them into the warm skillet. Cook until golden brown on one side, the carefully turn and cook until golden on the other side. Calories will vary depending upon the types of rice used. When using white rice, this entire recipe contains about 350 calories. This recipe makes several rice cakes - and you can make them as tiny or as big as you like.

Quick Low Calorie Recipe for Rice Dessert: Combine 1 cup of skim milk, 1 egg, 1/2 cup of Splenda, and 1 Tablespoon of cornstarch (or all-purpose flour)  together. Cook in the microwave until thick and creamy. If you desire a sweeter pudding - add more Splenda. If you desire a less sweet pudding, add less. If you desire a thicker pudding, add less milk AND if you desire a thinner pudding, add more. You'll want to stir the mixture every now and then as it cooks. After pudding thickens, remove from microwave and add 1 teaspoon of vanilla extract, 1 teaspoon of ground cinnamon, 1 cup of white rice, 2 Tablespoons of raisins (dark, golden or a mix - or you can use currants or dried cranberries). Allow to cool in the fridge. This low calorie recipe contains about 425 calories and makes 4 generous delicious serving OR 2 very generous delicious servings.

Quick Low Calorie Recipe for Wild Rice: Top 1 cup of prepared wild rice with one golden brown chicken strip or fillet which has been cooked on the stove top with cooking spray. Next, top the chicken with sauteed mushrooms and onions (use about 1/2 cup of mushrooms and 1 teaspoon of diced onions). Next, top mushroom mixture with 1/2 slice of cheese (fold cheese so that it forms a triangle for a prettier presentation). About 325 calories.

Quick Low Calorie Recipe for Spicy Rice: Mix 1 cup of prepared brown or white rice with 1 cup of vegetables that have been stir-fried on the stove top using cooking spray OR use 1 teaspoon of sesame oil for an additional 40 calories. Next, add your favorite Asian sauce. Tom and I are huge fans of the House of Tsang sauces which are packed with bite and flavor, and are ultra low in calories. Again - you can add some lean cooked meat if you desire more protein in your meal. Total calories using a 40 calorie sauce are about 240 calories.

BUT - please don't limit your ricey capabilities to the above low calorie recipes. No, no, no. You can add rice to soups, to salads, to casseroles and more for a delicious nutritional bite of flavor!
