Low Calorie Recipe for 7 Minute No Cook Frosting

As far as cakes go - they can be fairly low in calories, even when sugar is used rather than a sugar substitute. What jacks up the calorie (and often the fat) content is what goes on top of the cake. Chiefly - frosting - giant, lovely, tempting waves of frosting.

That generous slice of 200 calorie cake can double in calories (and sometimes triple) once the frosting comes into play.

So in order to decrease calories - we decided to leave the basic cake mix along. As a note -our vote for favorite brand of boxed cake mixes goes to Betty Crocker, Super Moist. Ya just can't go wrong when you have dessert with Betty.

Begin by preparing one super moist cake mix - and you can forget the layers if you have a large spring-form pan. Simply make one layer and bake as directed. For our vanilla 7 minute no cook frosting - we like to use any of the following flavors: vanilla/white, French vanilla, pineapple or lemon. And you can always begin with a basic white cake mix and add your own flavorings. In addition, the white cake mix calls for egg whites which in turn erases the calories of the yolk as well as the cholesterol issue as far as yolks go. Talk about a perk. :-)

Make sure that your cake has completely cooled before attempting to frost. And if you don't like Splenda - you can use 100% sugar instead, keeping in mind that sugar contains 800 calories per cup - still a good calorie purchase when it comes to frosting calories contained in this recipe.

Low Calorie Recipe for 7 Minute No Cook Frosting

Ingredients:
3 egg whites
1/4   to 1/2 teaspoon of cream of tartar (start with 1/4 and add more if frosting is limp)
1/4 cup of boiling water
1/4 to 1/2   cup of Splenda - depending upon how sweet you like your frosting
1/4 to 1/2   cup of granulated sugar - depending upon how sweet you like your frosting
1 teaspoon of vanilla extract

Using a deep bowl that has been chilled (this will help the egg whites whip faster) add all the ingredients to the bowl.   Whip until soft peaks form - from 5 to 7 minutes. If your bowl and eggs are really cold - the frosting can be prepared in as little as 1 minute, but I prefer to whip it a bit longer for a stiffer result.

For chocolate frosting - add 1 Tablespoon of cocoa powder before whipping. You can also color the frosting with food coloring.

OR - fill a piping bag and transfer onto parchment paper to create lovely low calorie meringue  cookies. OR pile it onto your favorite cream pie and cook until golden brown in the oven. I recommend 350 degrees with the oven being preheated.

Trust me - you will love our tasty recipe which makes a VERY generous amount - enough to frost 2 or even 3 layers if desired. And as you can see - it's so versatile!

The entire recipe using 1/2 cup of Splenda and 1/2 cup of sugar contains about 450 calories.
