" Bring us some plum pudding...."

Only two more weeks before Santa slides down the chimney! And if you're busy preparing your holiday meal, we've got a delicious plum pudding recipe that dates back to my great grandmother's time and it's quite delicious.

I've lightened up the calorie count by opting for healthier ingredients. And please take note that it's very simple to make in fact - it's quite primitive. You'll need a pudding cloth (or cheesecloth) which will be used in boiling the pudding.

A few notes: My great grandmother used candied fruit for which I have substituted dried cranberries. Also, if you prefer to use dark raisins rather than currants they should work well. And take note that plum pudding is very high in calories due to the high sugar content as well as the dried fruits (the high calories in the dried fruits are also the result of sugar). I have not tried this recipe using 100% Splenda - so I do not know what the result might be but it would shave an additional 400 calories. The total calories in this plum pudding recipe are about 2,607 - and yes indeedy that is quite steep! Therefore, enjoy 1/16 th of the plum pudding which equals about  163 calories per serving. Aaah - that's much better!

Very Easy Reduced Calorie Recipe for Old-Fashioned Plum Pudding

2 cups of skim milk (160 calories)
1/2 cup of granulated sugar (400 calories)
1/2 cup of Splenda (0 calories)
1 cup of chopped dates (415 calories)
1 cup of dried cranberries (369 calories)
1/2 cup of dark currants  (204 calories)
1/2 cup of golden raisins  (219 calories)
1 teaspoon of light margarine (40 calories)
1 teaspoon of ground cinnamon (0 calories)
1 teaspoon of baking soda (0 calories)
2 cups of self-rising flour (800 calories)

Begin by bringing the milk to a boil, then add the margarine and soda. Remove from heat and add remaining ingredients.

Incorporate well. Flour the cheesecloth and fill with the fruit mixture. Be sure that cloth is secured tightly at the top before adding it to the pot of boiling water - and do so very carefully. Also, be sure to keep the little ones away from the stove when cooking the plum pudding - as well as curious pets out of the kitchen.

Allow plum pudding to simmer at a gentle boil for about 2 hours. Remove and allow to cool completely before removing from cloth. Drizzling with a bit powdered sugar that has been mixed with a splash of milk if desired.
