Tom and I were in a terrific hurry this evening - so much to do and so little time. We have a cold snap moving into the area and needed to visit the market just in case the predicted ice storm decides to make itself at home for a few days.

Before heading out I checked the pantry and it was a little bare. There were a few slices of half-stale bread and we still had a bit of sliced cheese. And then it hit me - grilled cheese sandwiches! So if you love grilled cheese sandwiches AND you're on a diet, I hope that you'll love this reduced calories for grilled cheese sandwiches. As a note, grilled cheese sandwiches aren't totally without nutritional value. Bread lives in the grain family and cheese in the dairy family. And now for that tasty recipe....

Recipe for Low Calorie Grilled Cheese Sandwiches

  2 slices of bread (140 calories)

If you use whole grain bread you'll boost your nutritional value. Please use bread that contains 70 calories or less. If you enjoy diet versions of commercially prepared bread, each slice may contain as few at 35 calories which will really tame down the old calorie count!

  1 slice of cheese (70 calories)

Opt for skimmed versions of cheese such as 60 calorie  skim mozzarella. Today, we were down to American cheese which contained 70 calories per slice but it does tend to be less rubbery than skim mozzarella - and it melts super-well.

  Cooking spray, butter-flavored

Spray bread on one side with cooking spray and toast in a pan on the stove top. When bread is golden brown, remove. Be sure to place cheese on top of one of the breads while it is toasting so that the cheese melts nicely.

Total calories for one grilled cheese sandwich equals 210 calories. Wow - what a calorie bargain!

Typical grilled cheese sandwiches contain from 350 to 450 calories due to the 'over application' of butter or margarine. Although tasty, you don't need those extra calories - or the greasy feel that butter and margarine tend to lend.

To take our low calorie grilled cheese sandwich recipe to another notch, add any of the following to the top of the cheese before you slap on that other slice of bread: sliced jalapeno peppers, sliced black olives, sauteed onions, sauteed sliced mushrooms, sauteed bell peppers, 1 teaspoon of real bacon bits, 1 thin slice of deli meat.
