While some make use of cranberries by stringing them about their Christmas tree, these red bursts of Mother Nature are one of her best gifts to mankind. Pretty too - all wrapped up in bright red packages of goodness, containing a unique flavor that no other food can match.

The best perk is that cranberries are packed full of nutrition. They  are a great source of vitamin C and fiber. Cranberries  are low in sodium, low in fat and they taste simply dandy!

Cranberries are naturally low in calories but the Sugar Plum Fairy reverses the low calorie effect.   In turn, the Cranberry Calorie is greatly inflated and the inflation factor can carry over to our waist line if we're not careful. So much for ho, ho, ho.

Calories in Cranberries

1 cup of whole cranberries contains 44 calories.

1 cup of chopped cranberries contains 51 calories.

1/3 cup of dried cranberries contains 123 calories.

1 cup of sweetened cranberry sauce contains   418 calories. Canned cranberry sauce generally contains 6 slices per can. 1 slice of canned sweetened cranberry sauce contains about 100 calories.

1 cup of unsweetened cranberry juice contains 116  calories.

1 cup of cranberry juice containing sugar substitute (such as Splenda) contains about 40 calories.

Low Calorie Recipe for Cranberry Sauce

You will need:

- 4 cups of fresh or frozen cranberries (12 ounce bag)

- 1/2 to 1  cup of Splenda (depending upon how sweet you like your cranberry sauce.

- 1 cup of water

Allow water to boil and carefully add the cranberries. Simmer until cranberries burst apart - about 5 - 10 minutes, depending upon whether you used frozen or fresh cranberries.

Next, remove from heat and stir in Splenda. If you prefer a thicker cranberry sauce simply add a bit of cornstarch mixed with water to thicken the cranberries before adding the Splenda. About 1 or 2 teaspoons should do the trick.

To take this low calorie cranberry sauce to another level add a bit of grated orange peel or any of the following: chopped nuts, dried fruit, spices such as nutmeg, allspice or cinnamon, extracts such as a dash of vanilla.
