Low Calorie Recipe for Cheesy Chicken & Rice

Rice + Onion + Chicken Breast + Cheese = Low Calorie Cheesy Chicken & Rice

Delicious Cheesy Chicken & Rice can be prepared in advance and reheated in a flash. In this event, we recommend leaving off the cheese before reheating begins.

Ingredients in Diet Bites' Low Calorie, Low Fat Cheesy Chicken & Rice

1 small onion, chopped (28 calories)

1/2 cup of boned chicken breast (meat only, no skin - 231 calories)

2 cups of cooked white rice (instant or regular -  400 calories)

salt & pepper (optional)

1 cup of grated mozzarella skim-based cheese OR your favorite low fat cheese (341 calories)

To prepare our low calorie, low fat  Cheesy Chicken & Rice saute onion using cooking spray and add the chicken. Continue to cook until chicken is thoroughly cooked. Salt and pepper if desired.

Next, add rice and mix thoroughly. Transfer for a casserole dish, then top with grated cheese. The intense heat of the chicken and rice mixture will  quickly melt the cheese.

Sensational Suggestions

- Rather than using cooked white rice, opt for Spanish Rice for that extra kick in the Diet Pants.

- Add some of your favorite chopped veggies to the onions as they cook. We love sun-dried tomatoes which adds a splash of sweet, healthy goodness to the chicken and rice.
