Low Calorie Spanish Rice Recipes

Rice + Diced Tomatoes + Onion + Chili Powder + Cumin + Cilantro  = Low Calorie Spanish Rice.

This Diet Bites recipe is low in calories, low in fat and a breeze to prepare. And it can be prepared in advance and reheated when you're ready.

Ingredients in Low Calorie, Low Fat Spanish Rice Recipe

4 cups of cooked white rice (instant or regular)

1 can of diced tomatoes (We love the petite diced tomatoes. You can also opt for sun-dried tomatoes or use fresh tomatoes.)

1 Tablespoon of chili powder

1 teaspoon of cumin

1/4 cup of chopped onion

1/4 cup of chopped cilantro (use either dried or fresh)

cooking spray - we love the buttered flavored varieties OR you can use 1 teaspoon of extra virgin olive oil

To prepare our low calorie, low fat  Spanish rice recipe, using a deep pan or pot sauté the chopped onion and chopped cilantro in the cooking spray or olive oil. As a note, the olive oil will add about 60 calories to the recipe but it also adds health benefits.

Once the onions appear translucent add the rice and stir the mixture until the rice is well-coated. Next  add the chili powder and cumin, and stir quickly to coat the rice.

You'll need to work very fast at this point so that the rice doesn't stick to the bottom of your cooking utensil. Quickly add the  petite diced tomatoes. Heat until hot.

If you have opted to use fresh tomatoes, the tomatoes can be scaled beforehand so that the peelings are easily removed OR you can simply add the tomatoes to the rice in large chopped chunks. As the tomatoes cook, the skin will naturally peel away from them and a long fork can be used to remove them from the rice if desired.

This recipe produces 8 - 10 single 1/2 cup servings OR 4 generous one-cup servings. Entire low calorie, low fat recipe contains about 900 calories.

Serving Suggestion

Enjoy 1 cup of Spanish Rice with 1/2 cup of your favorite beans plus one flour tortilla shell.

For Cheesy Chicken Spanish Rice add 1 cup of cubed cooked chicken breast to the Spanish rice, then top with 1 cup of shredded skim-based mozzarella cheese.

The mozzarella cheese contains about 341 calories per shredded cup and 1/2 cup of cubed chicken breast contains about 231 calories.

When added to the basic recipe for low calorie Spanish Rice, the total equals about 1,472 calories. This low calorie cheesy chicken recipe serves four extremely generously for 368 calories per serving. What a diet deal!
