3. Feel free to add your own favorite ingredients as long as they do not significantly increase the calorie and fat content. A few healthy examples include: sun dried tomatoes, chopped onions and colorful chopped bell peppers. For more protein, add cooked chopped chicken breast.
4. If you don't like OR don't have skim base cheeses in your kitchen, simply substitute your favorite slice of cheese.
5. Use cooking spray to saute the mushroom and spinach as well as in cooking the flour tortilla shells until they revolve to a crispy golden brown. Recommended heat level: low to medium.
6. We recommend chopping up the raw spinach which will help ensure that your quesadilla stays in place bite after bite.
Although chopped mushrooms can be purchased at your local market, we find that whole mushrooms tend to be fresher. And washing the mushrooms to remove the dirt has little if any impact on the end result - and you won't be accidentally surprised by that little glob of dirt that the brush didn't quite manage to whisk away.

7. Serve quesadillas with low calorie dipping sauces such as picante sauce, chipolte sauce or light sour cream.
8. Purchasing whole grain shells will add more nutritional value. Also - be sure to shop wisely for your flour shells as they can range from 80 calories each to over 200. Or - consider making your own in which you can control the calorie content.
2 Flour Tortilla Shells (80 calories per shell for a total of 160 calories)
1 slice of mozzarella cheese (skim based) (60 calories)
1/2 cup of sliced mushrooms - any variety (8 calories)
2 cups of chopped raw spinach (29 calories)
Saute mushrooms and spinach in cooking spray cook flour shells in cooking spray until golden brown. Place sauteed spinach and mushrooms evenly on one shell, top with cheese then top with remaining shell. Using a knife or pizza cutter, cut into wedges. Serve hot.
