Quick Low Calorie Recipe for Dieters - Quick Rice Recipe

This is one of the most delicious low calorie recipes that has originated from the humble Diet Bites kitchen.

It's quick, it's easy - low in calories and can be pulled together in less than 3 minutes. YES - three minutes!! How quick and easy is that?

You will need one package of Uncle Ben's prepared Spanish Rice OR Cajun Rice. Microwave for 90 seconds according to package directions.

Open one can of yellow or white hominy - or canned chick peas can be used if preferred; drain and heat thoroughly.

We opt for the Bush hominy at 60 calories per serving. The regular-sized can contains about 210 calories. The package of Uncle Ben's rice contains about 400 calories total.

Combine the rice with the hominy and separate into two serving bowls. Add a slice of 60-calorie fat-reduced cheese to the top of each serving. You're done!

Makes two very generous servings. Total calories for entire recipe - about 720 calories OR 360 calories per serving.

We also like to sprinkle on a bit of curry powder - but take care if you're sensitive to heat. Chili powder, ground cumin, cilantro and salsa make other tasty options while adding minimal calories.

To take this low calorie rice recipe to another level, add one small can of thoroughly drained canned black beans which have been heated before adding to the rice mixture.
