Great Leftovers for Diet Menus

These original recipes by Diet Bites taste great but they taste even greater the following day making healthy leftovers for Waist-Watchers.

Texas Tornado Chili (due to the beans)

To make vegetarian-style chili, omit the beef and add 1 can of drained pinto beans with the kidney beans. For Texas Tornado Chili you will need:

1/2 pound of extra lean ground beef or chili meat (90% lean)
1 diced onion - any color
1/2 small diced bell pepper - any color
1 can of diced tomatoes
3 Tablespoons of ground chili powder
1 Tablespoon of ground cumin
1 can of drained kidney beans (dark or red)
1/2 cup of your favorite salsa
salt & pepper
cooking spray

Spray large pot with cooking spray to discourage sticking, then brown ground beef.  Drain to remove fat that has cooked out of meat.  Be sure not to pour down your kitchen since unless you are in the mood to see Joe the Plumber.  Next, return to stove top, add onions and bell pepper.  When onions clarify, add salt, pepper, cumin and chili powder. Stir, then immediately add salsa.  Stir, then add drained beans.  Stir and when beans are heated, add tomatoes.

Serve with a few saltines.  Add grated cheese and drained hominy for a Texas Two-Step chili, but be sure to add the calories with the cheese.

Calories in Texas Tornado Chili - To tally up the calories in your chili, base the figure upon the grade of ground beef used, then check the salsa, tomato and bean labels.  Allow about 45 calories for the onion and bell pepper.  Divide total calories by the number of servings.

A serving of ground beef is 3 ounces cooked and 4 ounces raw.

4 ounces of raw ground beef, 90% lean, 10% fat contains 199 calories | cooked 3 ounces contains 196 calories
4 ounces of raw ground beef, 85% lean, 15% fat contains 243 calories | cooked 3 ounces contains 218 calories
4 ounces of raw ground beef, 80% lean, 20% fat contains 287 calories | cooked 3 ounces contains 231 calories
4 ounces of raw ground beef, 75% lean, 25% fat contains 331 calories | cooked 3 ounces contains 230 calories
4 ounces of raw ground beef, 70% lean, 30% fat contains 375 calories | cooked 3 ounces contains 235 calories

The Leftovers Just Keep a-Coming

Texas Tornado Chili can be used to create more low calorie, low fat meals. Place a large spoon into a flour shell that has been cooked on the stove-top using butter-flavored cooking spray.  Add a bit of low fat cheese, fold and wow.

Or, roll low fat grated cheese and sauteed onions into corn tortillas, then top with Texas Tornado Chili and a bit more onion and cheese to create tasty enchiladas.

Or, try topping a baked spud with a spoon of chili.  Aren't leftovers grand?
