Dynamite Omelet Recipes for Dieters

The keys to keeping omelets low in calories are:

- use non-stick spray rather than oils, margarine or butter

- opt for skim-based cheese such as the skinny yet rather yummy 60-calorie mozzarella

- use large egg whites to one yolk

Put On the Pan Said Hungry Diet Man - Recipe #1, an Omelet for Dieters

You will need:

- 2 large egg whites plus 1 large egg yolk stirred together briskly with a Tablespoon of skim milk, salt & pepper

- non-stick cooking spray (any flavor)

- 1 cup of the following chopped vegetables: sliced mushrooms, diced onions, chopped bell peppers

- 1 slice of deli ham, lean and sliced razor thin

- 1 slice of skim cheese (about 60 calories)

Begin by spraying skillet and cooking veggies until tender.  Remove and pour in egg mixture, using more cooking spray if necessary.

Once egg mixture has cooked thoroughly on one side, carefully flip.  

To one side of the egg pancake, add 1/2 of the veggies and the slice of ham, then top cheese.  Fold. Top omelet with remaining veggies.

Calories in Put on the Pan Said Hungry Diet Man Omelet - About 230 calories.

The Jersey Special - Recipe #2, an Omelet for Dieters that is lower in fat and calories than the standard cluck.

You will need the following ingredients to prepare this recipe:

- 2 large egg whites plus 1 large egg yolk stirred together briskly with a Tablespoon of skim milk, salt & pepper

- non-stick cooking spray (any flavor)

- 1/4 cup of the following FINELY chopped veggies: chives, parsley, onions.

- 1 slice of skim cheese (about 60 calories)

Mix the finely chopped veggies into the egg mixture and pour into a skillet sprayed with the cooking spray. Flip when eggs are done on one side and while other side cooks, add cheese.  Carefully fold.

Calories in The Jersey Special Omelet - About 175 calories.
