Breakfast - 1 protein, 2 grains, 1 fruit
Egg sandwich: prepare 1 egg any way that you like and place between 2 slices of whole grain bread (70 calories each). Add a touch of light Mayo if desired to sandwich.
1 cup of melon, your choice
Lunch - 2 grains, 1 protein, 1 fruit
1 corn dog with mustard (150 calories)
Quick Mac Salad: 3/4 cup of cooked pasta mixed with 1 teaspoon of relish and 1 Tablespoon of light Mayo. Add salt and pepper if desired.
Dinner - 3 vegetables, 2 grains, 1 dairy, 1 protein
Eggplant Parmesan - you will need the following ingredients:
4 slices of eggplant
1/2 cup of spaghetti sauce or marinara sauce (50 calories)
1/4 cup of bread crumbs (seasoned or non-seasoned - about 120 calories)
1 slice of mozzarella cheese (60 calories) divided into four tiny squares
1 egg white, salt & pepper
1 Tablespoon of grated parmesan
Beat egg white until smooth.
Add salt and pepper to bread crumbs if desired. Dip eggplant into egg wash, then bread crumbs and press.
Place on a non-stick baking sheet and into a pre-heated 375° oven until golden brown.
Carefully remove and place the cheese onto the eggplant slices and return to oven until cheese is bubbly. Remove and carefully transfer to serving plate.
Pour warmed-sauce over eggplant. Sprinkle with grated parmesan.
2 ounces of smoked reduced fat Kielbasa sausage (cook in oven using foil while Eggplant is cooking - allow 175 calories)
