Snack Suggestions: Don't forget to incorporate two natural snacks into your day. We like the idea of fresh natural, raw fruit - and by making two selections you can assist in fulfilling the daily minimum requirements from the Fruit Group.
Breakfast - 1 grain, 1 protein, 1 dairy
Pig in the Blanket
1 biscuit (about 110 calories)
1 piece of lean sausage (allow 150 calories)
Cook sausage patty-style, then transfer into cooked biscuit.
Also enjoy 1 cup of skimmed milk.
Lunch - 2 protein, 4 grain, 1 vegetable, 2 fat (peanut butter, Mayo)
Chicken Salad Sandwich
Mix the following and serve between two slices of whole grain bread:
1/2 small can of drained chicken (white meat), 1 cup of chopped lettuce, salt, pepper and 1 Tablespoon of light Mayo.
Also enjoy 2 rice cakes OR popcorn cakes smeared with a mix of the following: 1 small banana + 1 Tablespoon of peanut butter (smooth or crunchy).
Dinner - 1 protein, 2 vegetables, 1 grain
Use the chicken left over from lunch to create delicious chicken croquets. Mix chicken with 1 egg white, 1/4 cup of wheat or white flour, 1/2 teaspoon of baking powder, salt, pepper and 5 crushed saltines.
"Fry" in a non-stick skillet using non-stick cooking spray. Serve with catsup if desired.
Also enjoy 2 cups of shredded cabbage mixed with 1 Tablespoon of Mayo and a dash of celery salt. Add a spoon of Splenda for a sweet slaw.
Also enjoy 1 slice of whole grain bread.
