Come & Get Me Soup!
Diet Recipe Low Fat, Ultra Low Calorie

This is one our most treasured diet soup recipes that can be enjoyed either hot or cold.  The main ingredient?  Beautiful, healthy, delicious pumpkin.  You can use canned pumpkin, or time permits you can carve the flesh out of a fresh pumpkin.  You'll need to cook the flesh, then bring to the consistency of canned pumpkin.

The entire recipe contains a scant 220 calories.  Now that's a diet treat!  Another great thing about our diet soup recipe is that it contains a bit of fiber and it's filling.  Now for our Come & Get Me Soup! recipe.

 

Ingredients for Come & Get Me Soup! - a low calorie, low fat recipe for weight loss and a happy diet enhancement:

The ingredients for Come & Get Me Soup! are simple: pumpkin, milk, spices, sweetener.  Here are more details regarding amounts needed for recipe:

1 can of pumpkin (15 ounces - ours contains about 140 calories for the can)

1 cup of skimmed milk (if you don't have skimmed milk or if you don't like skimmed milk, then use your favorite grade of milk and simply tack on any calories exceeding 80 calories to your entire recipe)

The spices in Come & Get Me Soup! can be adjusted to suit your personal taste.  You can use Pumpkin Pie Spice OR a mix of the following ground spices: cinnamon, ginger (just a smidgen), nutmeg (just a smidgen), cloves and allspice.

Splenda to suit personal taste.  If you choose to enjoy your soup warm, Splenda will stand up to the heat.  If you prefer Nutrasweet - or another brand of no calorie sweetener, then you may wish to enjoy your soup cold OR add the sweetener just before serving.

Mix all ingredients together in soup pot, then heat.  If you wish to enjoy the soup cold, allow to cool before transporting to the fridge.

A sprig of mint or a sprinkle of ground cinnamon on top of the soup looks lovely.  You may also take a tiny bit of sour cream and swirl on top for an elegant presentation.

Because Come & Get Me Soup! is so easy to prepare - and is so delicious, it makes a great crowd pleaser.  Halloween parties, school events, church events, garden parties - these are just a few occasions where you can welcome your guests with a quick, tasty soup.
