Because my father climbed right back in bed with his former way of Diet Life when his diet ended.  Although he could pull of the weight quickly, he just couldn't keep it off because he didn't know how to manage his meals.

As a note, healthy foods cause weight gain whenever the body has reached its calorie (energy/food intake) requirement for the day. Any calories that are consumed after that balancing point are stored in the fat cells for later use. Even those calories from the healthiest of foods such as carrots, cucumbers and onions.
