It's so easy to prepare roasted chicken.Prepared rotisserie chicken is very delicious - and yes, ultra easy to make a meal from. Our recipe is just about as easy - and the great thing is that you can use the parts of the bird that you like best. We like to purchase a bag of the skinless breasts. Simply thaw - in your microwave if you wish, and place onto a slightly oiled section of foil. Salt and pepper both sides of the breasts and place into a toaster oven for about one hour. The cooking time will vary depending upon how many breasts you are roasting. We cook ours at 375 degrees. Once the chicken is roasted, you can do all sorts of things! One of our favorite recipes is to slice the breast and place it onto a bowl filled with a healthy salad mix. It's so simple! Here are three more of our favorite recipes. Quick Recipes for Roasted ChickenBagel Sandwich RecipesToast a plain bagel in your toaster. Spread with poppyseed dressing - or your favorite spread. Add slices of the chicken along with leafy greens and slices of red-ripened tomato. Add thin slices of avocado. Add a serving of skim milk to your meal along with a serving of reduced fat cottage cheese and other fresh raw vegetables, such as carrot sticks and celery. You'll feel great about the foods that you are eating! For dessert - we have a very special tip. Grab your favorite fruit and slice it into bite-sized bits. If you're using frozen, zap it in the microwave until it is room temperature, or a bit warm if you wish. Sprinkle on one teaspoon of granulated sugar per 1 cup of fruit and add 1 Tablespoon of your favorite coffee creamer. We enjoy Italian Creamer by Coffee-Mate as well as the vanilla based flavors, such as the Vanilla-Caramel. Stir and enjoy. This is truly an awesome dessert that is very low in caloric values. For example, one cup of strawberries contains 45 kcals; add 35 kcals worth of creamer and 15 kcals worth of sugar - and we're still below 100 calories.

Place into a deep bowl and add 1/2 cup of sour cream. Use the reduced fat variety to save more kcals. We like to prepare our pasta in advance and warm it to room temperature in the microwave. Any variety can be used for this recipe - even spaghetti. Bow-tie is very pretty and makes a delightful visual presentation. And when we satisfy our eyes, we tend to feel more satisfied with our meal. Add two cups of the cooked pasta to the chicken and sour cream mixture. Add 1/3 cup of sliced black olives. You can also add steamed button mushrooms and broccoli flowerets if you wish. Salt and pepper as desired. Quick & Easy Chicken Soup RecipeAs with our pasta recipe, any parts of the chicken that you like best can be used. The cooking time is reduced because cooked chicken is used. In addition, the preparation phase is less messy because you'll be working with cooked rather than raw poultry. Start by placing a Tablespoon or two of margarine into a deep soup pot. Melt and add 1/3 cup of fresh chopped onion along with 1/3 cup of thinly sliced celery. Stir and cook on low heat until the onion clarifies [becomes translucent]. Add 1 cup of thinly sliced carrots. Stir and add 1 large container of chicken broth along with 1-2 cups of the chopped roasted chicken. When the carrots are tender-crisp, add 1 cup of instant rice and cook an additional five minutes. Put a cover on the pot and allow to sit for about 10 to 15 minutes before serving.
