A Diet Sandwich Recipe for Ciabatta Bread

 


Bacon? Avocado you say? Surely not while on a diet plan! Yes way - and we have the most scrumptious recipe featuring these two stars on delicious ciabatta bread.

Let's get started with the easy recipe, shall we? We can have lunch or dinner on the table in less than 10 minutes. And oh - by the way, this is an awesome appetizer for parties and celebrations. Simply cut the sandwich from corner to corner forming four triangles. Secure with frilly-topped toothpicks and spear an olive with the pick before inserting into the bread if you wish.

The Recipe Ingredients

1. Ciabatta Bread - Walmart makes and sells a delicious version for a nominal price and this is what we used for ours.

2. Bacon - For each sandwich prepared you will need two strips of cooked bacon. We placed ours into the microwave between paper towels, then blotted any visible oils after cooking was completed. Almost all regular strips of bacon will end up containing about 25 calories when prepared in the microwave rather than pan-frying.

3. Avocado - You will need a couple of slices for each ciabatta that is prepared.

4. Vegetable Assortment - slices of fresh vine-ripened tomato, leafy green lettuce leaves.

5. Salad dressing or Mayo or mustard of any variety. Opt for your favorite and keep in mind that if you choose the reduced or lighter fat varieties, you'll save calories.

6. Margarine - and yes, you can opt for reduced if you like but we used 50-calorie per serving regular margarine for this recipe as it serves to crisp the bread better than the lower fat versions.

How to Prepare

1. Spread a serving of the margarine in a very thin layer on the bottom sides of the ciabatta bread. Place under heat until golden brown and very crisp. We used our toaster oven for this step.

2. While the bread is toasting, cook the bacon, peel the avocado and slice thin. Also prepare the lettuce and tomato.

3. Spread the toasted ciabatta with your choice of dressing, then add the remaining ingredients. Add a thin slice of cheese if you wish when assembling the sandwich.

Any of the following sides work well with this recipe:

Breads, pizza recipe.- baked beans

- cottage cheese

- corn on the cob

- side of tomato or vegetable soup

- chips of the reduced fat variety

In Summary

This recipe can be enjoyed anytime of the year but tastes extra special amid the warmer days. It's very easy to prepare and contains minimal ingredients.

The addition of both bacon and avocado add a lot of flavor to enjoy without adding a plethora of calories. Avocado may work to stimulate weight loss when dieting - but don't overdo or you'll negate the benefits. Just a couple of slices will suffice.
