Egg whites are unsinfully good when it comes to calories and cholesterol. It's the old yolk that contains all the fluff. However, when egg whites are fluffed, the end result can be stunningly low in calories and fat. As a note, the Cloud Pie Crust recipe below can also be used to create delicious cookies. Simply pipe or spoon whipped whites onto a non-stick cookie sheet and bake. Use an assortment of extracts to create different flavors of low calorie cookies. You can also use a bit of cooking spray to ensure cookies don't stick.
Prepare crust first by beating egg whites into stiff peaks. Place egg whites into a cold bowl add cream of tartar, then beat. When eggs peak, carefully and slowly add Splenda and vanilla extract. Spoon mixture into a non-stick pie plate and then scoot into a preheated 400° oven until lightly golden - about 7-10 minutes. Crust will cook quickly - so keep an eagle eye on oven. Remove and completely cool before filling with the following pudding mixture.
