We can gobble a lot of lean protein rich turkey for just a few calories as long as we remove the skin and visible fat. An entire cup of chopped roasted bird contains only 238 calories; that's really challenging to beat. There are also 41.05 protein grams in that one cup serving. Wow! We've hit the jackpot for sure.

Lean Turkey Salad Recipe Ingredients

This recipe is much like a chicken salad one but because we are using turkey it will have its own unique flavor.

1 cup of shredded cooked turkey, dark or white meat
1/4 cup of Light Miracle Whip Salad Dressing
1 cup of finely chopped Iceberg lettuce
1 Tablespoon of sweet pickle relish
1 Teaspoon of finely chopped onion, dash of celery seed
1 Tablespoon of dried cranberries
1 Apple, cored, peeled and chopped
1 Tablespoon of chopped English walnuts, pecans, pistachios or sliced almonds
Salt, Pepper to Taste

How to Prepare Our Lean Turkey Salad Recipe

Simply combine all of the above ingredients and enjoy on toasted whole grain bread or stuffed into a pita pocket. Black olives are also delicious in this recipe. If you wish, you can use hulled roasted sunflower seeds rather than the suggested nuts.

And if you aren't a fan of dried cranberries, you can opt for your favorite dried fruit or simply omit.

Turkey Noodle Soup

Amend the size of the meat to suit your personal preference as well as the amount of suggestion bouillon. We omitted salt from this recipe because bouillon is very high in sodium content.

Turkey Noodle Soup Recipe Ingredients

2 cups of either raw, boiled, grilled, baked or roasted turkey, lean meat only - skin removed with any visible fat
1 teaspoon of cooking oil
1/2 cup of chopped onions, 1/4 cup of finely chopped celery with the strings removed
1/4 cup of chopped fresh bunch parsley
2 cups of baby carrots - and these can be parboiled to reduce cooking time if you wish
2 - 3 cups of egg noodles; use the quick cook variety if you wish
3-4 chicken bouillon cubes or you can omit the recommended amount of water and use commercially prepared boxed broth instead
salt, pepper as needed

How to Prepare Our Turkey Noodle Soup

Heat the oil in a deep pot and add the poultry along with the celery, onion and parsley; stir to coat with the oil. If the meat is raw, continue to cook until almost done throughout before adding the baby carrots.

You'll need to add water to the pot after adding the carrots - and when the recipe is completed there should be about one to two inches of broth above the ingredients.

If you prefer a lot of broth, then ensure at least two inches of such above the ingredients; if you prefer less, then the one inch standard will work well. When you add the water, add the bouillon cubes.

These need to be fully dissolved so we prefer to add them at the beginning of the recipe; this will also allow the flavor of the bouillon to be distributed throughout the soup.

Add the egg noodles and continue to cook the soup until they are tender but not overdone as they will turn to mush.
