This diet recipe for Chicken Tacos serves four generously; be sure to add a side of steamed rice or Mexican rice to your meal plate and a low calorie beverage such as plain, unsweetened tea.

Chicken Tacos Recipe Ingredients

2 cups of roasted chicken breast, chopped to bite sized pieces
4 steamed corn or flour tortilla shells - or you can opt to use the hard variety of corn tortilla taco shells
4 cups of the following fresh chopped vegetables: lettuce of any variety, tomatoes, onions, cilantro
1 Tablespoon of ground chili powder, 1 teaspoon of ground cumin OR a packet of taco seasoning
Optional Ingredients: reduced fat sour cream, shredded low fat cheese, pickled jalapeno peppers, salsa, Pico de Gallo

How to Prepare Our Chicken Tacos Recipe

If you are short on time, you can purchase the pre-made chicken breast in the cold-meat section at the market - or you can opt to use the white meat from a rotisserie chicken. There are so many different seasonings offered these days where the rotisserie bird in concerned - from Cajun seasoning to buttery garlic - so pick the flavor that you feel will go best in the taco.

Place the chicken into a non-stick skillet and add just a bit of water. Sprinkle on the ground chili powder and cumin and stir until the water evaporates and the seasonings permeate the meat.
