Getting in Shape for Summer & Our Easy to Prepare Lettuce Wrap Recipe

The topic of June places the focus on getting in shape for the hot summer days that loom over the horizon.

Although warmer weather equals greater opportunities for getting out and about, it also equals a lot of grief for overweight individuals.

Those unwanted pounds can produce uncomfortable sweating sessions, and make the old ticker work well-beyond what it was intended to do.

But enough of the bad and on to better things, right!

Cool Southwest Style Lettuce Wraps

They do contain a teensy kick due to the ranch dressing - but as indicated in our recipe, you can opt to use any low fat marinade or salad dressing of your choice. You will need the following ingredients to prepare this low calorie diet recipe.

The Recipe Ingredients for Our Cool Southwest Style Lettuce Wraps

3 ounces of cooked chicken, cubed

The following veggies:  1/4 cup of shelled corn; 1/4 cup of drained black beans; 1 shredded carrot; 1 shredded zucchini
light, reduced fat ranch dressing OR your favorite low calorie salad dressing or marinade

sea salt & cracked pepper to suit personal taste

2 Large Lettuce Leaves that are bathing in a bowl of ice cold water


How to Prepare This Diet Lettuce Wrap Recipe

Stir fry the vegetables in zero calorie cooking spray until they are tender.

Add salt and pepper if necessary to the vegetables.

Add the chicken to the pan and stir. Cook until the chicken is warmed throughout.

You will need to allow the vegetable and chicken mixture to cool just a bit because if it is too hot, it will wilt the lettuce - and soggy wraps aren't fun at all.

You can cool the lettuce leaves by soaking them in an ice and water mixture and thoroughly drying before the chicken mixture is added.

The leaves won't warm-up as quickly after soaking in the ice water and the vegetable and chicken filling will still remain warm.

Add the reduced fat ranch dressing (about 2 Tablespoons) to the veggie mix and stir.

Carefully fill one side of a lettuce leave with half of the southwestern veggie mixture - as you would if you were making an enchilada.

Next, roll over once, then fold each end towards the center. Finish folding the lettuce leaf by rolling it shut.

Entire recipe contains about 350 calories. Enjoy both wraps. And that's a wrap!
