Tortilla Wraps

 

A healthier alternative for bread lovers.

 

These little jewels can be served either hot or cold! Using wheat flour tortillas will render more health benefits over regular flour tortillas.

 

Our recipe below uses 80 calorie regular flour tortillas. The brand of cheese we used contained 70 calories per slice.

 

Little Lucy's Diet Wraps

 

'Fry' off 4 flour tortilla shells using butter flavored (or regular) cooking spray.  Fry until golden brown.

 

Next, put the following ingredients into the hot pan using cooking spray to keep from sticking if necessary:

 

Ingredients:

1/2 cup of sliced mushrooms

3 slices of deli roast beef, chopped (or ham)

2 slices of white American cheese

1/2 cup of chopped onions

1/2 cup of bell pepper, chopped or sliced

 

Set cheese aside.  Cook remaining ingredients over stove until onions are translucent, then add cheese and remove from heat.

 

Fill tortilla shells by spooning mixture on edge, then rolling up enchilada-style.  Serve with light sour cream or salsa if desired.  

 

Each Little Lucy Diet Wrap contain about 155 calories each without salsa or sour cream. Serves 2 generously.

 

As a note, more and more bakeries are offering yummy tortilla options from roasted pepper flour tortillas to rosemary flour tortillas.

The following are a few cute, but naughty Diet Enemies that you will meet as you journey along The Old Diet Trail.  For most of us, when we aren't in Diet Mode, these little buggers might be our best friends!

There’s one slice of coconut cream pie in the fridge with no one’s name on it.  You can’t have it; the entire world knows that you are on a diet now…  The 'secret' is out!

 

You deserve a reward, too.  It took a lot out of you to whip up that pie for your honey, Slim.  Lucky Slim.  He can eat a cow and a cornfield without putting on one extra ounce. If you didn’t know better, you’d swear that his belt buckle is 100% spandex.  

 

That pie is good too; in fact, you make the best coconut cream pie in the world, even take the time to toast the coconut the Martha Stewart way.  You deserve at least one taste of that pie; that tip looks nice.  

 

You tell everyone at the dinner table that one tip of a slice of pie won’t damage your diet.  

You awake at two in the morning, discovering that you've innocently been sleep walking - sleep walking to your fridge, more pointedly to that coconut cream pie.  You hold an empty pie plate in your hand - the same pie plate where the best coconut cream pie in the world once rested.

 

Your best diet defense for Diet Enemy #1: Have you ever heard that if you reach out your hand to a snapping turtle and it latches onto your finger, that it won't release you until lightening strikes? This is one of the major keys to dieting - remaining as steadfast as a wooden soldier!  You MUST become a snapping turtle!  Don't allow anyone OR anything to make you let go of your diet plan until you reach your diet goals (i.e. lightening strike).  For more articles relating to Willpower, click here:  Willpower

 Checking expiration dates on pancake mix packages may prevent serious illness, including death.  Old pancake mix is a ripe vat, encouraging the formation of mold.  Some individuals who are allergic to mold may experience a life-threatening incident.  One death has been reported that was associated with pancake mix past its expiration date.  Tips for packaged pancake mixes:

 

    Purchase mixes that come inside of sealed bags rather than those that are put straight into the box.

    If the pancake mix smells, looks or tastes odd, do not use and do not continue to eat.

    Store dry pancake mix in an area that with low humidity.

 

But don't stop with pancake mixes.  Check all labels - from the pantry, the fridge, including medicines in other areas that may be past their prime.
