The topic of May is placing the focus on the importance of relaxation during the weight loss process, as well as how our minds can help us conquer weight.

Wow!  We're already into May and making fast tracks to that Good Old Summer Time, depending upon who you ask, of course.  Warmer weather states are cringing at the 100+ degrees in their future while the mild states say, "Bring it on, baby!"

It's time to get the outdoors spruced up for warmer weather ahead. That grill over there looks like it could use a good, brisk cleaning. That should burn up some calories.

The backyard looks nice, but it could use a few chairs, perhaps a table, and maybe a tiny fire pit. Shopping will burn up some more calories. And don't forget those cute little umbrellas for the beverage glasses.

Weed out a spot in the yard for a garden.  Fresh veggies, fruit trees, and a herb garden will not only make an impression in your yard, they will also make an impression in your weight loss plan.  And talk about burning calories.

It's berry picking time and you don't even have to get you hands dirty.  Look for ripe red strawberries and healthy blueberries that are so nutritiously powerful that they may slow down the ageing process.

Great buys during the month of May at your local vegetable market include: lettuce - all types, greens, potatoes, mushrooms. In addition, crops of strawberries are springing-up all over and make a great buy for your buck - as well as a super healthy purchase.

Strawberry Short Cake Recipe for Spring

Spring is spouting up patches of delicious berries and what better way to celebrate the season with low calorie, delicious Strawberry Short Cake. Our recipe is ultra simple. You will need the following ingredients to prepare:

1 cup of fresh strawberries (45 calories)

Sponge Cake (allow 100 calories)

Sugar OR Splenda (0 for Splenda)

Light Low Fat Whipped Topping (allow 45 calories)

Simply microwave a few berries until they are hot. Add a bit of Splenda OR sugar if you don't like the no calorie sweeteners. Stir in the remaining strawberries.

Pour over a slice of sponge cake OR a small dessert shell (100 calories).  Top with light whipped topping. Cool Whip Free™ contains a scant 15 calories per serving. What a Diet Deal!

Calorie Content: About  190 calories per serving.

Tip 1 - For those who prefer a thicker filling, a bit of cornstarch can be added to the berries before placing into the microwave. Simply mix about 1 teaspoon of cornstarch (or flour) with a spoon of water until cornstarch melts, then stir into berries.  Microwave. The filling will be thick.

Tip 2: Strawberry jam or preserves may be used rather than the fresh berries.  Allow for the calories in the jam and subtract berry calories from total calories.

Tip 3: Experiment with other tasty fresh fruits, such as peaches or try a bit of lemon curd.

Tip 4: Brush pastry with egg white for a glossy crust.

Calorie Content: About  213 calories per serving.
