Simple Ingredients, Easy Breads to Prepare

 


My great grandfather was often a welcomed guest of the Cheyenne nation. Based on his stories that were passed down from generation to generation, he was always greeted with a bounty of food.

Bread was always part of the meal - freshly made.

The following recipes are just two that have been passed along in my family - from mother to daughter over the years.

While my mother never taught me how to cook, I used to watch her. I wonder at times why we never made cookies together like most mothers and their daughters.

Nonetheless, one can learn quite a lot just by observing.

Indian Corn Cakes

You will need the following ingredients:
1 cup of stone-ground cornmeal, white or yellow
1/2 cup of all-purpose white flour plus 1 teaspoon of baking powder
1/2 cup of hulled corn from the cob plus 1 teaspoon of vegetable oil
1 egg, preferably large grade - whisked
1/2 teaspoon of salt
1/2 to 3/4 cup of milk, depending upon how dense you prefer the corn cakes
2 Tablespoons of melted margarine

 


Start by placing the fresh corn into the warmed oil that has been heated in a non-stick skillet. As the corn cooks slowly, the flavors will be brought out in a wonderful way. Transfer both the oil and corn to the batter, once it has cooled.

To prepare the batter add all of the ingredients together excepting the milk. Slowly add as much or as little as you wish until the batter reaches the desired consistency. Stir in the corn and the oil it was cooked in.

You can either bake the batter as you would cornbread at 400 degrees until golden brown or you can use more oil and cook them on the stove top.

The create different textures and flavors, try adding the following ingredients.

Jalapeno Cheese Indian Corn Cakes: Add fully drained slices of pickled jalapeno peppers and a finely grated Mexican-style cheese blend to the batter before cooking.

Sweet Corn Cakes: Add 2 teaspoons of granulated sugar to the batter and serve with honey.

Western Style Indian Corn Cakes: Add shredded cheddar cheese and small chunks of lean ham to the batter. Indian Fry Bread Recipe
