Easy Recipe

For the easiest recipe ever, opt to use either thin slices of butter pound cake OR spongecake. The spongecake is commonly sold in rings, loafs and in dessert shell form. It is often referred to as angel food cake as it's very nominal in calories and has minimal fat as it is prepared with egg whites.

The pound cake may sound alarming and raise health concerns, but when sliced thin it contains about the same number of calories as the spongecake.

One-twelfth of a commercially prepared butter pound cake contains 109 calories and 5.57 total fat grams. The cholesterol content is rather steep at 62 milligrams. You can slash all of these values in half by getting 24 slices from the cake - and they will still remain generous serving sizes.

A spongecake of the same size contains 110 calories, 1.03 total fat grams and 39 milligrams of cholesterol.

How to Prepare Shortcake

It's key to use the sweetest fruit possible. You can either cook it on the stovetop in a minimal amount of water to bring out more of the sweetness and flavor - and then thicken it with a bit of cornstarch and water before topping the cake OR you can simply use the fresh berried. We prefer the latter method. Here are the steps:

 


1. Place the cake base on a pretty dessert plate and top with 1/3 cup of prepared instant Jell-O cheesecake pudding that has been mixed with one Tablespoon of sour cream. You can opt to use the pudding that is fat and sugar free if you wish. It's such a minimal amount that we prefer the regular package.

2. Wash and dry the berries thoroughly. Slice to a very thin state and layer on top of the cheesecake pudding mixture. Top with either whipped topping or real whipped cream.

We also prefer the real whipped cream - but we opt for the reduced fat variety which contains a tiny 15 kcals per serving.

Calculating the Calories

When a spongecake base is used, the total amount of caloric values equals 175 kcals.

When 1/24th of a pound cake is used as the base, the total comes to about 125 kcals.

The exact amount of energy values will be influenced by the amount of strawberries that you use. As a reference, one-half cup of whole berries contains only 45 calories.
