A Healthy Bread Recipe

Our recipe is not only easy to prepare, it produces a wholesome, earthy and rustic loaf of bread. It can be formed to any size or shape - so let your imagination go wild.

The entire recipe contains about 1300 calories.

This bread is at its full peak of flavor on the same day that it is baked.

Recipe Ingredients for Peasant Bread

2 ½ cup of bread flour plus up to ½ cup more if needed when mixing

1 package of active dry fast acting yeast plus 1 cup of hot water

1 teaspoon of salt

1 Tablespoon of Olive Oil

Non-Stick Cooking Spray

Be sure that the temperature of the water is hot, not warm and not scalding. Begin by placing one cup of the bread flour into a large mixing bowl. Add the hot water, the salt and the yeast.

 


You can use a hand mixer during this phase as the ingredients will combine easily. Add one more cup of the flour.

At this point set aside the blender and use a long wooden spoon for stirring. Incorporate the flour well before adding the last ½ cup. Add only if needed. If the dough is sticky, then you'll want to add to reach a smooth consistency. If more than this amount is needed, then add but do not exceed three cups total.

Work to form a rough ball of dough. Knead on a floured surface for about 15 minutes. Flour your hand if necessary if dough starts to stick.

Transfer the ball of dough into a deep bowl which is at room temperature and that has been coated with 1 Tablespoon of olive oil. Turn the dough so that it become coated on the outer surface.

Cover with a damp and clean kitchen cloth and move to a warm area, allowing two hours of rising time. The Peasant Bread will double in size during this time.

Punch down the dough and shape it into the desired form. The more rustic the shape, the better in our opinion. Place it onto a baking sheet that has been lined with parchment paper and allow it to rest for one more hour. It should again double in size.

Brush with a whisked egg white. Next, preheat the oven to 400 degrees and bake for 35 to 45 minutes, depending upon the strength of your oven. The Peasant Bread can also be baked in a toaster oven.
