Celery, an Excellent Healthy Choice for Your Diet Plan

It's very low in caloric values - at some 6 tiny calories per medium stalk. It's basically void of fatty acid content and it can add flavor and texture to your meal plan.

Stuffed Celery Recipes

There is a trick when making stuffed celery. After it is washed, many cooks make the mistake of trying to add the filling. Unless it is first thoroughly dried - such as with a clean cloth or paper towel, the filling will not stick. The excess moisture [water] causes the filling to slide.

Pimento Stuffed

You will need the following ingredients: finely shredded low fat cheese of your choice, jarred pimentos, light Mayo [we like Miracle Whip].

Simply drain the pimentos, add them to the cheese and add a bit of Mayo. Go light-handed in adding the last ingredient. Fill the stalks.

Cream Cheese Stuffed

While you can you regular cream cheese, it's really sort of boring. We recommend adding the following ingredients before filling your stalks: pumpkin or sunflower seeds OR poppy seeds, dried fruits of your choice and chopped nuts.

 


Peanut Butter, Raisins Stuffed

Peanut butter, as well as all nut-based butters are healthy choices - packed with protein and dietary fiber benefits. Add either golden or dark to one of your favorite nut-butters before stuffing into the stalk. As with cream cheese, opting for the whipped variety can save fat and calories.

Cream of Celery Soup Recipe

Ingredients

1 quart of chicken broth or stock, low sodium, low fat variety
1 pound of celery, strings removed and finely chopped
2 carrots, peeled and grated
1/2 cup of finely chopped white onion
1/3 teaspoon of table salt
1/3 teaspoon of ground pepper - white or black
1 teaspoon of ground paprika
1 quart of milk, heated until hot but not boiling
1/3 cup of reduced fat margarine
1/3 cup of all-purpose white flour

Add the margarine to a deep soup pot. Once melted add the onion, celery and carrot and allow to cook until the onion becomes translucent. Add the chicken broth. Whisk together the remaining ingredients - excepting the paprika, into a smooth consistency and add to the pot. Bring to a boil and continue to cook for an additional 10 to 15 minutes. You can leave the vegetables as they are or remove, blend and return to the pot. Sprinkle with the ground paprika once transferred to bowls.
