One large carrot contains 30 calories while 1 cup of chopped carrot contains 52 calories. Typically a bag of carrots holds 8 carrots unless they are large and in that event, we can expect a six-pack. On average the carrots are small therefore we've based our calories in the mid-range for this diet recipe. One medium carrot contains 25 calories - the small only 20. Per 100 grams carrots contain 41 calories.

On the other hand yams are considerably higher in caloric value. One cup of raw cubed yams contains 177 calories. Per 100 grams yams contain 118 calories - more than 2/3rd's the calories of carrots.

Magic Bullet Blender Recipe for Nutcracker Yams

You will need the following ingredients for this holiday diet recipe:

pin_red.gif 1 small bag of cooked baby carrots (about 150 calories for 6 carrots)

pin_red.gif  brown sugar (about 22 calories per Tablespoon)

pin_red.gif  ground cinnamon (0 calories)

pin_red.gif  Splenda (0 calories) and feel free to use your favorite sugar substitute. If you don't like sugar substitute then by all means use granulated sugar. One cup contains upwards to 800 calories so measure carefully based on your level of personal sweetening preferences.

pin_red.gif  No Calorie Butter Spray (Parkay brand - 0 calories) OR you can use light, fat reduced margarine.

pin_red.gif  1-2 Pecans, crumbled (optional). Pecans contain about 20 calories per half - or 40 calories per whole pecan based on a medium-size pecan. Larger pecans are of course, higher in calorie value. One large pecan contains about 50 calories. Nutritional values also differ based on the variety of pecan.

How to Prepare This Magic Bullet Recipe

The beauty of Nutcracker Yams is that YOU control the amount of cinnamon, sugars and butter spray added. As mentions - yams contain three times the calories as carrots; sweet potatoes contain about four times the calories - so substituting carrots saves a lot of calories.

Cook carrots until fork-tender. Next, load the large tube of your Magic Bullet Blender with the cooked carrots. You'll need to allow them to cool a bit before loading as they will be easier to work with. 

Fill the tube half-way; add remaining ingredients: Splenda, butter spray, brown sugar and ground cinnamon. Do not add the miniature marshmallows.  

Next, use the whipping blade to pulverize the carrots into a smooth consistency. It may take 2-3 cycles to get the desired consistency - as well as to get all of the carrots blended for your recipe.

Transfer the carrot blend to a pretty serving dish that microwavable. Top with marshmallows and pop in the microwave until melted. Marshmallows will swell while cooking - so watch carefully.

You can also opt to bake the carrots in the oven. We recommend 350 degrees in a preheated oven until the marshmallows turn golden brown.
