A yummy broccoli cheese soup recipe for dieters that's low in calories.


Even the 'I Hate Broccoli Guy' on the Magic Bullet infomercial might love this creamy Magic Bullet masterpiece.

Although there is no fruit to conceal the broccoli flavor, the flavor of cheese melds with the green for a yummy, rich grab-your-witch's-caldron soup!

Cheese compliments the flavor of broccoli so well - as it does with several other vegetables like potatoes. However, it doesn't suit the flavor of many vegetables.

We'd never even think about putting cheese on our carrots, our yams or our beets.

But when cheese adds flavor to the broccoli it also has the potential to add calories, something that the dieter must keep under control in order to achieve weight loss results.

As cheese is the base of all broccoli cheese soups we'll need to use the lighter, lower fat versions of cheese as well as the low fat versions of milk to dilute our cheese.

For our Skinny Broccoli Cheese Soup Recipe we're using LIGHT Velveeta cheese which has a very nice flavor as well as a velvety texture which makes for a rich, silky, smooth soup.

Magic Bullet Recipe for Skinny Broccoli Cheese Soup

Load the following ingredients into your Magic Bullet using the large loading tube and then whirl for about six seconds using the chopping blade attachment:

pin_red.gif 2 ounces of light VELVEETA (total of about 124 calories)

pin_red.gif 1/2 cup of cooked chopped broccoli - one cup of raw chopped broccoli contains a skinny 31 calories; 1/2 cup of cooked chopped broccoli contains 27 calories.

pin_red.gif 1 cup of skim milk (contains 80 calories)

pin_red.gif cracked pepper which contains zero caloric value

pin_red.gif garlic or onion powder may be added, but we prefer the simple taste of broccoli and cheese

How to Prepare Skinny Broccoli Cheese Soup

Diet Broccoli Cheese Soup Prepared in Magic BulletPlace chopped ingredients into microwave and cook until smooth.  

Be sure to use the vented lid while microwaving cheesy mixture.

By opting for the reduced fat cheese we saved about 50 calories in our recipe. By using the low fat milk we saved an addition 80 calories in comparison to regular, whole milk calories. That's an impressive total of 130 calories.
