Prepare your favorite whole grain bread by spreading it with reduced calorie margarine and toasting on the stove top. Fill with a thin slice of roasted turkey, lettuce leaves and thinly sliced tomato. Shaking a bit of salt and cracked pepper onto the tomatoes will add a blast of flavor. For the spread, use mustard, spicy mustard or light Mayo.

Diet Friendly Rainbow Turkey Recipe

The Recipe Ingredients

1 cup of chopped turkey - either raw or cooked
Salt & Pepper to suit personal taste

Buttered Flavored Non-Stick Cooking Spray

1 fresh orange OR you can use orange juice if you have that on hand

1 cup of mixed colors of bell peppers (red, yellow, green) sliced into thin strips

How to Prepare This Recipe

Cooking Note: If you don't have multi-colored bell peppers on hand, simply use one color. You can also use a mix of onions, bell pepper and celery if you prefer.

Skin and wash turkey if it's in raw form. Next, blot dry then squeeze 1/2 of the juice from orange onto turkey. You want to get as much of the orange flavor as possible into the bird, thus the reason for blotting. Add salt and cracked pepper to suit personal taste.

Place into oven on a non-stick pan sprayed with non-stick cooking spray along with the sliced bell peppers, or you can cook on the stove top if you prefer. Cook turkey until golden brown. Remove and drizzle with the following orange sauce.

Cook remaining juice with 1/2 teaspoon of cornstarch until thick in microwave stirring often. Pour carefully over the turkey. Grate 1/2 teaspoon of orange rind over turkey.

Serve with:

1 cup of fresh green beans seasoned with no calorie butter spray;
1/2 cup of white or brown rice with no calorie butter spray;

a side salad of lettuce, tomatoes and cucumber with 1 Tablespoon of low calorie salad dressing (40 calories), and  a slice of bread (60 calories).

This low calorie recipe makes 1 serving for about 475 calories.
