One potato, two potato - a lower calorie sweet potato recipe.....


Ingredients for Low Calorie Sweet Potato Recipe:

- 1 baked sweet potato (about 4 ounces)
- Dash of ground cinnamon
- 2 Tablespoons of Marshmallow Fluff
- 1 Serving of Reduced Fat Margarine OR No calorie butter refrigerated spray

While sweet potato is still piping hot, dust with ground cinnamon. Add the margarine and move around with a spoon to mix with the sweet potato filling.

Finally, top with the marshmallow fluff. OR, you can add a couple of large marshmallows to the cinnamon flavored sweet potato and return to the microwave. It only takes a few seconds for the marshmallows to sweet to giant proportions - so monitor with a watchful eye.

This low calorie sweet potato recipe serves one for about 160 calories.

Sweet Potato Soup, a low calorie recipe

2 Cups of Sweet Potato, mashed
1 Cup of Reduced Fat Milk
1 Teaspoon of Ground Cinnamon
Splenda, Reduced Fat Margarine, Dash of salt

Use fresh sweet potato when possible for the best flavor. Add milk to the meat of the potato using a small, yet deep soup pan. Add the ground cinnamon and Splenda - or you can use sugar, light brown or dark brown sugar, to suit personal taste preferences.

Add a spoon of reduced fat margarine to add a buttery flavor to the soup or you can opt for imitation butter flavoring if you wish.

Also add just a dash of salt. Serve either warm or cold with a wedge of crusty bread and reduced fat margarine.

Sweet Potato Pancake Recipe

Fresh sweet potato tastes best in the recipe.

To prepare, cook one small specimen in the microwave for about 5 minutes.

When cool enough to handle, break open the skin and scoop out the flesh using the back of a Tablespoon.


The Recipe Ingredients

1 cup of all-purpose white flour
1/2 cup of mashed sweet potato, packed
1 Tablespoon of Splenda which measures like sugar
2 Teaspoons of Baking Powder
1 Slightly Beaten egg
1 cup of skim or reduced fat milk
Dash of Salt

To prepare, combine all of the required ingredients and incorporate batter well - but if some small lumps remain, that's totally okay.

Cook on the stove top as you normally would your homemade pancakes.

Serve with reduced fat margarine and KARO Light Corn Syrup which only has 120 calories per serving - about half that of regular syrup.
