Ingredients for Low Calorie Slow Cooker Recipe - Sausage n Cheesy Potatoes

4 ounces of fully cooked REDUCED FAT, extra lean Polish sausage
2 potatoes, peeled & washed & cut into four wedges each

2 slices of Mozzarella cheese, skim variety (60 calories each)

1 small onion, chopped

1/2 cup of skim milk

Cut the extra lean sausage into bite-sized slices and pan-fry with the onions until sausage is seared well on both sides and onions have become translucent.

Transfer to slow cooker; add milk. Cook on high for about 4 hours. About 30 minutes before dish is completed cooking, add the cheese.

Carefully transfer to serving bowl. Serves 2 for about 325 calories each.

Tin Top Stew, a low calorie stew recipe that can be prepared in a crock pot or slow cooker

Recipe Ingredients:

3 fresh garden carrots peeled and cut into 1 inch rounds
4 fresh potatoes (small) peeled and quartered
1 teaspoon dried parsley
1 diced raw onion, any variety
5 beef bouillon cubes
2 Tablespoons of cornstarch
Water, Salt, Pepper

Brown beef on the stove top in a pan. Next, pour about 1 cup of water into the pot and stir to release the meat juices.  Add salt, pepper, onion and parsley. Add 3 more cups of water, the potatoes and carrots.  Allow to cook for about 10 minutes, then add beef bouillon cubes. Continue to cook until the bouillon dissolves completely.

Transfer to the slow cooker. Add more water if necessary so that water just covers stew ingredients.

Cook on high for about 4 hours, or until the stew meat is fully tender and done. If the stew requires a bit of thickening, stir in a mixture of cornstarch and water. Stir to combine and allow to cook until the stew juices thicken into a rich gravy.

This low calorie slow cooker recipe contains about 900 calories and makes several servings. Divide total servings into 900 calories to determine single-serving calorie content. It serves six people generously and four people in kingly fashion for a little over 200 calories per serving.

Serving Suggestion: Serve with warmed crusty bread slathered with reduced fat margarine. Also enjoy a cup of reduced fat milk with the stew.
