How to Prepare This Recipe
Begin by cooking the flour tortilla in a pan on the stove top using zero calorie cooking spray. Butter flavored or olive oil versions of the cooking spray will add a tab more flavor to this recipe.
Cook the flour tortilla for about 30 seconds on each side so that it remains easy to roll - yet soft and pliable. Remove from the pan. Next, whisk the eggs and add salt, pepper and the sliced mushrooms. Pour into the pan.
Cook until eggs are set and are no longer runny, then remove them and place on one end of the tortilla. Crumble on bacon, then top with cheese; roll up burrito style. Serve with your favorite salsa if you wish which tends to be naturally low in caloric content.

If you prefer a traditional quiche with a crust, simply place the egg filling into a flour-based pie crust before baking. Other healthy ingredients can be added to the egg filling - such as chopped bell pepper, onions, pimentos, leeks, lean bites of ham, finely chopped celery, lean bacon bits and even chopped black or green olives.
Be sure to experiment with your spice rack as a myriad of flavors can be created. For an Italian style quiche, opt for the white cheese such as the Mozzarella or Muenster; add Italian spices such as oregano, rosemary and basil. Try adding chopped sweet dried tomatoes to the egg batter.
For a country style quiche, use yellow or white American cheese, Colby or Cheddar. Add bacon bits, fresh or dried parsley and 'large' cracked pepper.
For a Mexican style quiche, add chili powder, ground cumin and cilantro - either dried or fresh to the egg batter. Also add some chopped jalapeno pepper. Prepare with reduced fat Pepper Jack cheese. You can even add a Tablespoon of your favorite salsa to the egg batter before baking.
