One cup of homemade stuffing contains about 400 calories - depending on the recipe. Although delicious, homemade stuffing tends to contain real butter or margarine, fatty broth from the bird, and either cornbread made with shortening, whole milk or cream and a bit of bacon drippings OR stuffing made with bread that is pricey in calories.
Diet Conversion: If you are using a favorite recipe substitute the following ingredients for the unhealthier ones if your recipe calls for a similar ingredient: clear broth, light salt, onions & celery sauteed in non stick cooking spray (rather than in oil or butter). If you are pulverizing bread for your stuffing, purchase the low calorie bread. There is no love lost in stale bread; stale bread is stale bread. Also, substitute no calorie butter spray for butter or margarine. Depending on your recipe, calories for dietized stuffing ranges about 75 calories per 1/2 cup and up. Or, opt for boxed stuffing, substituting the butter for no calorie butter spray. Calories in 1/2 cup of stuffing are about 110 when dietized. That's about 240 calories per cup - almost half of the full blown homemade recipe.
