How does brown sugar differ from white sugar? Taste and color aside, brown sugar contains molasses which is typically acquired from cane sugar or beet sugar.

The use of beet sugar-derived molasses tends to be more popular in areas outside of the United States. Beets lend a strong 'vegetable beet'  odor and taste to brown sugar that may not be desirable for certain recipes.

As a foodnote, Natural brown sugar (also called raw sugar) is the first crystallization of the sugar cane and does not contain added dyes and chemicals.
