Friendship Bread Recipe, Worth the Effort

This wonderful, tasty bread is a bit like a worthwhile friendship; it takes a long time to develop!  

First, you'll need to make a 'starter' for the recipe and the you'll need to nurture your recipe for ten more days.  

Once you've made your first batch, you can share the 'starter' with a friend.  Keep in mind that you'll need a lot of patience to make this bread, but it's very tasty and worth the wait.

Take care not to use metal spoons, bowls or equipment when making Healthy Friendship Bread.  Plastic bowls and spoons should be used; ceramic and glass also may be used.

Friendship Bread Starter Recipe

THE STARTER: Friendship Bread requires a starter. You can get a starter three different ways; buy it, get it from a friend; or make it yourself.

The basic recipe is to pour 2 cups of WARM water into a bowl or crock.  Dissolve 1 Tablespoon of sugar in the water, then dissolve 1 pack of dry yeast.  Gradually, stir in the flour.  Be gentle.  Cover the container LOOSELY and place in a warm area that has an even temperate of about 80 - 85 degrees.  It will bubble, as the yeast is 'working'.  Stir your starter once per day for five days.  It will have a pungent, yeasty odor at this point and will be ready for the fridge.  It should be the consistency of pancake batter, not a tight ball like you might think.

When you get ready to prepare your Friendship Bread, measure out 1 cup of the above starter and put it in a large bowl. Add 1 cup of milk, 1 cup of sugar and 1 cup of flour. Cover with plastic wrap and allow to 'work' for 24 hours before making your bread.  If you plan on sharing the Friendship Bread starter, double this recipe.

Now you are ready to take your Friendship Bread starter and make the Friendship Bread!

Day 1 of the Recipe

1 cup of  'starter' which you will allow to sit at room temperature

Days 2 - 5 of the Recipe

Stir once a day using a wooden spoon.  Remember - no metal should be used.

Day 6 of the Diet Friendship Bread Recipe

Add 1 cup each of:  White Flour/Skim Milk/Sugar.  Stir gently until ingredients are 'just' incorporated. Use your wooden spoon taking care not to over stir.


Days 7 - 9 of the Recipe

Stir once a day using a wooden spoon.

Day 10 of the Diet Recipe

Again, add 1 cup each of:  White Flour/Skim Milk/Sugar

At this point, you should have 4 cups of dough. Separate into 4 containers - 3 of which you will share with a friend. Write the recipe on some pretty paper or a card.

Recipe Ingredients for Diet Friendship Bread

Add the following to your 1 cup of dough:

1/2 cup of oil
1/2 cup of skim milk
3/4 carton of EggBeaters (or 3 eggs)
1 Tablespoon of REAL vanilla

Set this mixture aside.  In a separate bowl, combine the following ingredients:

1/2 cup of sugar + 12-15 packets of Splenda (or use 1 cup of sugar)
1 teaspoon of baking powder
1 teaspoon of baking soda
1 Tablespoon of ground cinnamon
1/4 teaspoon of salt
1 large box of vanilla instant pudding mix
1/2 cup of nuts (pecans or walnuts work best)

Preparation Notes

Spray 2 loaf pans with non-stick cooking spray, then dust with a thin layer of sugar.  Pour batter into pans and bake in a preheated oven at 325 degrees for about 1 hour, or until center is done.

Each loaf yields about 10 servings each at about 225 calories per slice.  Keep in mind that Healthy Friendship Bread is more akin to a cake than bread, so it's ultra rich - much like banana bread.
